Happy Saturday my Friends!

Just a lil quickie before I run off to the gym and then the farmers market on this lovely…eerr kinda dark…morning.

So this happened last night as usual on Fridays…

Leg Day Cheat Meal Time with my parents! Started off at Tom Yom Thai and Vietnamese and despite the atmosphere being more fast-food like and less restaurant like (my Mom said not so cozy), I really enjoyed my typical dish of ALL ZEE VEGGIES and SEAFOOD. Yum.

As for my normal Ice Cream Challenge, I was super stoked when I found out that Guelph sold Kawartha downtown at a Imported Candy shop call Sweets! Candy but was gravely disppointed when I got there and all they had was the bottom of the barrels left.

#Sadface.

So we quickly made a change of plans to our always happening Baskin Robbins and I’m SO GLAD WE DID because this beauty then hit my face..

You better believe that I died a lil bit last night. That ice cream was super loaded with snickers and caramel flavour. The best of both worlds

Overall my sore and tired self (thanks leg day) was thoroughly stuffed but I’m still drooling over that ice cream. This week I had my parents there for support too which was nice as I had a rougher time last week without them. I still had my moments last night but I tried my best just to die of my foodgasm.

Follow-Up + Tuesday Thoughts

Hey Friends!

Just a few lil thoughts I had to share for today. Bring on the typical Lil Miss Fitness Freak randomness

1. Thank You

Thank you all so much for your love, feedback and support on yesterday’s vlog. It means the world to me trust me. I promise to bring you along on this journey with me so that that hopefully it can help anyone who may be going through the same thing. Facing fears is not easy. It doesn’t just happen without internal struggles and some ugly times and I hope to be as real with you as possible.

2. Feedback

3. I’m Really Gunna Miss My Dad’s BBQ

For real though..

Sweet potatoes + grilled curry seasoned hoki fillet topped with avocado and olive oil drizzle + unpictured appie salad as usual

 I thought roasted sweet potatoes were good, but charred on the barby just takes them to a whole new level of amazingness. Anyone else in the same boat where the black, charred parts are the bestest?

4. I Faced My First Fear Challenge Today.

As part of increasing my calories, specifically carbohydrates, my nutritionist and I planned on slowly adding an intraworkout supplement into my training. It was something I was thinking of doing for a while, but dried fruit really freak me out because sugar is the biggest fear thing for me. I actually brought up the idea as I have seen many people on YouTube who use candy as a pre or intra (meaning during) workout boost of sugar to finish their workout strong as opposed to dying off and half-assing the end part of their training because their glycogen or energy stores are gone at that point. As Gabrielle and I discussed, once you reach about 1.5 hours of training, it is about time that you consider a refuel as your glycogen stores are probably starting to wane a lil bit. I have regularly felt drop off and so I really did think about poppin some dried fruit as a way to get my flame back on when I start to fizzle out BUUUUUTTT..

The sugar freaked me out and I didn’t do it.

Today, as part of my goals this week, I will say that I successfully popped dried figs during my workout today and I didn’t die. Did I feel a bit of guilt? Yes. I felt guilty as my body heated up like fire because my metabolism is not used to concentrated sources of sugar. I felt guilty feeling that sugar on my teeth after I ate them just tauntin me that I ate something I feared.

What I also noticed?

I didn’t feel half asleep on my drive home due to being uber depleted and fatigued after being drained completely during my workout. I was also able to power through the rest of my workout feeling more alive.

So like I said before, I need to focus on those later benefits that I felt and not think too much about the other things. I train hard and if it helps me perform better, why should I be afraid of it?

So the dried figs will continue on. One day at a time.

5. I Miss My Housies.

Emily texted me the other day and she made my whittle heart melt.

These two have honestly become my best friends and I truly miss them already. We have our own lil jokes. Our own traditions. Our own quirks. We even have our own go-to restaurant that we always have our date nights at.

So glad my housemates love Thai food as much as I do. Red Papaya is our jam-a-rama.

I get to have Rita in my life for the next month or two before she heads back home to China, but I’m without my Emily for the whole summer as she lives in Montreal. I’m excited to live with them in our new house next year

6. I’m Going Over Board On Halibut.

Spring and summer time is the ONLY time that halibut steaks are available. Steaks are immensely better then any fillet will ever be tenderness and moistness (sorry…) wise because you are baking it with the bone in and the skin wrapped around it.

Pretty sure I have eaten this 3 times this week…#Obsessed.

S’mores And Pesto…WIA(Monday)

First I wanted to say thank you for your comments on my pushup challenge yesterday and sharing your pushup numbers with me! You all did an amazing job 😀

What I Ate Wednesday Button

So since it has been a while, things have changed a bit over here…

First thing is that my preworkout proats aren’t very pretty anymore…

Long Live Zee Zoats!

OMG guys I have fallin in love with the fluff factor that combining egg white oats and zoats has made. Do you see how much is in that bowl for a 1/2 a cup of oats? Genius I tell you. Plus you get a green veggie into you first thing in the morning. I call that a win.

That beauty of an ‘icing’ on the top is another new thing and it’s delicious but doesn’t photograph too well (and I didn’t even put it all on…). Basically I have switched from putting my Cellucor protein powder in my oats (I used peanut flour now) and instead, have been mixing about a 1/3 of a scoop with some US almond milk to make an icing to put on top. Not only is icing amazing in every way, but the flavour is so much more pronounced and with Cellucor’s amazing flavours, I can savor a different ‘iced’ concoction every morning. This one was Chocolate Raspberry Truffle.

What has stayed the same?

The quest bar bites and nut butter of course. Can’t have oats without some party guests.

Despite the UGLY looking picture, here’s how I make’em if you’re interested

The night before…

This is optional, but I do it for the absorption benefits. Soak 1/2 cup of gluten free oats (I used quick ones) + 1 tsp chia seeds + cinnamon in just enough water to cover.

In the morning…

  1. Grate 1/2 a zucchini (about 100grams) into your oats.
  2. Add 10g, or about a tbsp or two, of peanut flour (PB2 or chocolate PB2 would work too if you don’t mind the added sugar and salt)
  3. Mix together with enough almond milk to make it into a thick soupy consistency and nuke for 2-3 minutes. The zucchini leaches out lots of liquid, but the chia seeds and peanut flour are very absorbent so it evens out. If you’re too dry, just add more liquid. It’s a learning thang.
  4. Quickly stir in 1 egg white (about 3 tbsp or 32g). Add more water if it’s too thick (ie not moving)
  5. Nuke for another 2 minutes (ensuring it doesn’t overflow if you’re microwave is powerful)
  6. Remove and add fruit of choice. I generally do banana and sometimes strawberries if I’m feelin a change of pace.
  7. Nuke for a final minute. This is optional if you want your fruit melty like me.
  8. Remove and crank in some pink sea salt (a new thing I am trying to incorporate into my diet slowly…will discuss later) and any other superfood add-ins or extracts you like. I’m currently stirring in either lucuma or my Pranin acerola C (vitamin C powder). Stir that all up.
  9. Then add your questie bites (I bake mine), cacao nibs, nut butter of choice and a sprinkle of peanut flour on top.
  10. Finally, add your icing. Just mix up some whey with water or milk and toss that on top.

Voila, your masterpiece of voluminous, hot goodness. 😀

You can do this on stove top too, but I just like the microwave technique better. Less pots and I don’t loose oatmeal to the pot. 😛 Plus, if I die of anything, it would probably be due to microwaves because I require my food hot so I may microwave something again halfway through eating…yes I have a problem.

Anywho, this sat for about an hour then helped me find my way to the gym and get me through my 2 hour glute/ham workout Weeeooo….

Glute Hamstring Raises (GHR’s). I just found a place to hook my feet into rather than having to find someone to hold my feet down.

Tried these for the first time in a long time (superset with weighted split squats) and I always forget how nice of a burn they give.

I had to literally run out of the gym because I had a dentist appointment to fix my permanent retainer (the lil wire they put behind your teeth after braces so they don’t move) that I snapped a few months ago at 11:10am. I finished my workout at 11ish

My bad.

I’m stubborn so I tend to just go like a maniac to make sure I don’t cut corners in my workout. Instead, cutting corners that day meant very lil stretching, but hey at least I got my workout done… 😀

I kinda stretched while scarfing down my post workout muffin…my form of a shake which you have seen before.

IMG_6879Yes it looks UGLY (wow that’s a trend it seems) but it actually tastes good. The ugliness comes from the green colour that is my chlorophyll for alkalizing after workout stress (ie. acidifying the body). The only difference now is that there is pink sea salt in it.

Oh I also sip on these on my water throughout my workout

IMG_6877BCAA’s by Rivalus in green apple. These are the cleanest BCAA’s I have found, meaning they have no artificial crap or sweeteners in them that make my tummy unruly. PLUS they have tons of natural anti-inflammatory ingredients like turmeric in them for support after your workout.

So after my 5 minute dentist appointment to get an impression done for my wire, I headed to Loblaws to pick up the items I needed for my parents dinnah that night and then headed back home.

Soon after, the stomach yelled at me that it was hangry so this was inhaled…

Under the pile of Mrs. Dash-ified roasted veggies is Uncle Bens brown rice and roasted chicken breast.

Do you ever get to the point where you are so hungry that you don’t feel hungry anymore? I keep telling myself to stop doing that but my hunger comes on in like an instant and it’s always when I’m doing something…then you have to cook and then well…

I swear it eats itself.

Soowwrrry tummy.

So my Dad and I headed into Georgetown and did some Christmas shopping for my Mom while we were waiting to pick up Maggie from the beauty salon…

After we came home I finished the big project that is pesto making that I had started while waiting on my Dad.

IMG_6886It takes forever to make (all that cleaning!) so you make a massive batch! This is my basil-cilantro one with a heavy hit of garlic, lemon juice and chili flakes. Nomz. I put that *it on errythang.

During the afternoon I took my next round of supps (I forgot to mention the probiotic I take every morning after my breakfast, which is Natural Factors Women formula with the cranberry strain).

IMG_6909Two teaspoons of my Botanica Double Potency fish oils in Key lime and 1 drop of my Ddrops.

After preppin my parents dinnah, I then made my own and ate with them while they had their before dinner drink and chatter.

Baked swordfish with pepper and lemon juice. Roasted acorn and kabocha squash. Kale and chard blend with mushrooms, onion, garlic, curry and chili powder.

Man do I love swordfish. Mmmmm and squash of course. This plate is nothing you haven’t seen before but I have had to scale back dem greens because unlike a cow, I only have one stomach and it doesn’t agree with eating an entire bunch of greens in one sitting. Hard lesson I have learned too many times.

After accompanying my parents for their midnight meal dinner and cleaning up, I blogged a bit and answered an email (which should have been done way before now…stupid exams) to an amazing follower who contacted me a lil while back. I capped off my night with my typical frozen puddin and questie.

The s’mores Questbar is amazing BUT I will say I like it raw better then baked because I feel like it keeps more of its flavours that way. Anyone else agree? Yum.

NOTE: I have been playing around with pink sea salt because 1. salt is actually needed by the body as an electrolyte and for some reason it only occurred to me recently that I may actually be deficient in salt due to the only salt in my diet being from 1/2 a questie a day and any residual salt in my fish and such. Athletes especially need more as they sweat it out during training. 2. I have heard that there are digestive benefits of including it in your diet AND 3. I have also red that if you are chronically tired it may be a sign that your salt is low and I have to say that postworkout I have noticed a difference. Before I used to be drained completely after my workout and almost falling asleep, but the lil bit of salt has appeared to keep me awake and perky up until I have my next meal about 1.5 hours later. Thoughts?

Do you like pesto? Favourite way to use it? It makes an amazing topping for fish (especially fattier ones like trout and salmon) and salad dressings!

Favourite fish? It’s so hard for me to just pick one, so a couple of my favs include trout (red fish), swordfish, sea bass and halibut for my white fish and scallops and lobster for my shellfish. Yeah…see can’t just pick one. I’m a seafood lover.

Choco-Chunk Red Velvet Brownies

So I mentioned yesterday that I got a new whey from Cellucor

….and it’s pretty awesome let me tell you! I love Cellucor because not only are their flavours to die for, but their products also sport some great macros and a gluten free certification 😀

Of course there is some sucralose in there and some dyes so it’s not 100% clean in my book BUT it’s much better than many other whey’s (shorter ingredient list). It even uses beet powder for the majority of the red colouring just like red velvet cake used to be made in the past! Good Stuff.

BUT…

The main event was when I decided to attempt to make some healthy, fudgey brownies out of this flavour. Despite only ever making my own brownies ONCE before, these turned out amazing. Dense. Fudgey. Not too sweet. Chunkalicious

Anywho, so these were quite the treat and now here comes the recipe!

Choco-Chunk Red Velvet Brownies

Makes 9

Macros: Calories: 123 Carbohydrates: 13 Fat: 5 Protein: 8 Sugar: 2 Fiber: 5

Dry Ingredients:

  • 1 cup gluten free oats (ground into a flour)
  • 1 scoop Cellucor Red Velvet Cake Batter whey
  • 1/4 cup almond meal
  • 2 tbsp coconut flour
  • 6 packets of Sweet Leaf Stevia (or any Stevia)
  • 1/2 tsp baking powder
  • 1 chocolate brownie Questbar (can use regular ol’ choco chips if you don’t own Questies)

Wet Ingredients

  • 1/2 cup butternut squash puree
  • 1/4 cup unsweetened apple sauce
  • 1/2 cup unsweetened vanilla almond milk
  • 1 large egg
  • 1 tbsp coconut butter (I used Artisana raw coconut butter), slightly melted

Directions: Combine all the dry ingredients in a large bowl (exception of the Questbar). Once those are combined well and all of the clumps are gone, chop up your Questbar in ‘chip-sized’ pieces and fold those into the dry. In another bowl, whisk your egg and then add the rest of the wet ingredients. Stir/whisk until smooth. Fold your wet into your dry and pour into a sprayed square pan/tin. Take a spatula and even out the top nicely. Toss in the oven for about 16-18 minutes or until the edges are beginning to pull away from the sides of the tin but the top is not overly brown (a toothpick will come out a wee bit moist). You want them to be slightly underdone or else they will end up drying out as brownies continue to cook once they are out of the oven. We want fudgey here friends!

Eat A Rainbow & WIAW

Hey Friends!

Do you eat a rainbow everyday?

I personally love Jen’s theme this month for What I Ate Wednesday.

I would obviously be all for this theme as I’m a veggie-aholic. Sometimes to my own demise…Why you hatin on my veggie lovin tummy?

That being said, I feel like I would be just showing you what I normally eat as my plate is always at least 1/2 filled with vegetables. SO what is a food blogger to do when they want to jump back into this shindig?…

Challenge time!

I decided to challenge myself this WIAW by ensuring that I ate at least one thing from each of the colours of the rainbow + a black, brown and white food too. I didn’t have to put much thought into some colours, as I knew those were easy to get BUT some I did have to think about. There ain’t many foods that are purple lets be real here…Let’s see how I did shall we..

It’s my rest day today (no gym) so it’s Zoats for breaky.

Normally I only have berries on my rest days but today I wondered where yellow was gunna fit in and decided what the heck, banana’s diving into my oats this morning too.

Rest days also call for naps. 😀 Yay 1.5 hour nappies before my interview at the gym (for summer part time position) at 10:30 this mornin. After my nap, I took my fish oils and ate the last lil bits of my flaxy baked chicken fingers (unpictured) and ran out the door.

Although it was my day off today, I picked up an hour shift for 12:15 at the gym for one of the trainers as she was sick. So, after my interview I rushed home to nom away at my colourfully prepped lunch and grab my stuff for later errands before runnin out the door yet again to go back to the gym and work.

Did I mention my lunch was a colourful one? #DoYouEvenSalad?

Colour Count: Spinach: Green. Asian Slaw Mix: Green (cabbage, cucumber, snap peas, bok choy), Purple (raddiccio), Orange (carrots). Roasted mushies: Brown. Roasted onion: White. Roasted Squash (butternut and acorn). Orange. Avocado: Green. Flaxy Baked Chicken Fingers: Brown.

Colour Winner: Green.

Man was that a good salad! Topped with my usual homemade dressing (1/2 tsp olive oil, 1 tbsp lemon juice, 2 tbsp water, 2 tsp mustard, chili flakes, rosemary and garlic powder to taste).

After my one hour shift, I needed to hike it up to Limeridge Mall (which is quite the trek as I have to take a bus…turns an hour trip into a 4ish hour whirlwind) to check for a new steamer, stock up on some more Questbars (Despite just receiving my new Cookies and Cream box, my other flavours were gettin too low for my liking. Anyone else get antsy when they have only one bar of a given flavour left?) and hopefully get my new iphone all fixed up.

After all of that running around in the mall, this is what I ended up with..

Ugh. Oh and…umm yes that is another box of Cookies and Cream in addition to my personalized mixed box. I’m already a 1/3-1/2 the way through my new box I received just last Friday cuz it’s been #EatAllTheC&CQuestBars lately for my nightly snack. They are addicting and may just be my new favourite flavour. Oh, and Dad, if you are reading this…

Just because I got another box doesn’t mean you can ask again for 6-7 of them. I’m a horrible daughter I know but 6 or 7! That’s just crazy talk. 😛

Rant Moment. I have literally been calling and calling trying to get my new iphone fixed. The brand spankin new iphone 5s that I so graciously received at Christmas from my parents will not turn imessage on thus not allowing me to get any messages from people who have an iphone. Basically that means I receive texts from no one (including my boss) as it’s an iphone world out there these days. Lil bit unsettling if you ask me and beyond frustrating. Apparently they have come to the conclusion that it must be a hardware issue and I have to go to the nearest apple to either get it fixed or get a new one. Tell this to the person who doesn’t have a car and the nearest one is Mapleview Mall that borders Burlington. Daaaaaaaadddd help me! Hopefully I can work something out with my parents this weekend as I can’t deal with this ‘no messaging’ thing for much longer.

Phew. Sorry I just needed to let some of that out.

Anyways, back to the food.

During my running around in the mall, searching high and low for a microwave steamer pot (failed to find one), I nommed on this weeks pronut flavour. Peanut butter and plantain.

Not my favourite of the flavours to date, but still good. All I did was take my PB&J pronut and sub 50g of plantain (steamed) for the raspberries and the apple sauce and upp’ed the liquid a tad.

Dinner was fab except for the fact that I was suuuuuupppper bummed to discover that the acorn squash I bought at the grocery store today was actually supposed to be a kabocha….

Confession: I think I cried a lil bit when I opened the fridge and found no kabocha as I was craving it allllll day.

NO KABOCHA! My world just ended.

I had to make due with the other squashes that were in my fridge to go along with my beautiful piece of steelhead trout. That trout may have helped ease my pain a lil bit…

I won’t count my spices, which were curry, turmeric and chili powders and chili flakes, BUT I will give a lil tidbit about turmeric.

Turmeric has been researched a lot lately for its anti-inflammatory properties (amongst other potential benefits) thanks to the main component in turmeric, curcumin. This active ingredient, which is also the main pigment in turmeric making it yellow, has begun to be bottled for selling purposes to those looking for a natural remedy for inflammation. ONE NEAT FACT! Absorption of curcumin is best when paired with fats due to being fat soluble. Therefore if you want the most benefits from the use of turmeric in your foods ensure you dissolve it in a fat of some kind (cooking oil) or use it on a fattier protein (like trout or salmon).  Learn more here.

So there you have it friends. My rainbow day. Now, I didn’t hit all of the colours…I missed blue, but as you can see, eating a rainbow is not hard when you are veggie lover like I am and nom away on whole foods.

Vanilla Banana Chunk Oatmeal “Cake”

…well…my versions of cake at least….

Wow I really need to start getting more creative with the names of my recipes. NOTE TO SELF don’t just type out the ingredients and call it a title…hmm maybe I will brainstorm for this lil numba at the end of this post and you can tell me which you like best. Okay, enough with the chitter chatter as I have quite the treat to share with ya!

After sharing my 2 baked oatmeal creations the other day, I was then craving one myself…

So I made one…

One that quite frankly resembled and tasted like a cake (well according to my tastes).

The lovely cake like icing (complete with girly sprinkles) was all thanks to my amazing tasting Cellucor COR-Fetti whey. Soooo worth the purchase and I would recommend this flavour to ANYONE ANYDAY. Cellucor my dear, I thought your cinnamon swirl and peanut butta marshmallow were awesome but this one really takes the cake. Pun intended. You really outdid yourself with this one! Yum.

ANNNYWAYYYS I said enough chit chat didn’t I?

Bring on the cake!

Vanilla Banana Chunk Oatmeal “Cake”IMG_3522

Serves 1

In a bowl combine the following ingredients:

  • 1/2 cup oats
  • 1 tsp chia seeds (can replace with flax)
  • 1/2 tsp cinnamon
  • 1/8 a chopped up brownie Quest bar (optional yumminess)

Give it a quick mix and then add the following:

  • 2 tbsp liquid egg whites
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp coconut oil

Let that sit for about 10 minutes while you preheat your oven to 350 degrees. I normally soak my oats overnight to ease the digestability and nutrient extraction but I was making this whole thing the night before so I could only soak it for about 30 minutes. This step is completely optional OR you could stop the process here and place the mixture in the fridge overnight and bake it up fresh in the morning if you have the extra time.

With the oven preheated, add 2-3 tbsp of water (or more milk) to your mixture to loosen it up a tad (as the oats will have taken in the majority of the liquid). Fold some diced banana chunks into your mixture (I used 55grams). Pour your mixture into a sprayed foil cup or baking ramekin and bake in the oven for about 25 minutes or until the top is firm and the sides are beginning to pull away from the sides.

If you are like me and making this the night before, when you wake up in the morning you can flip it out of the cup and place under the broiler for about 5 minutes (watch it for burning!) to crisp the top if you wish. If you are making it fresh, after it is done baking, give it a few minutes to set before attempting to flip it out of the cup or it may break.

While your cake is broiling, combine the following in a small cup.

  • 1 tbsp plain yogurt (I used goat)
  • 1/2 scoop COR-Fetti whey by Cellucor (can sub for another cake batter flavour OR vanilla)
  • a few tbsp of water or milk to make a thick icing

Take your cake out and ice away. I chose to top my cake with more brownie Quest pieces so while my cake was broiling I chopped the remaining 1/8 of my brownie Questbar (if using, you will need 1/4 or more if you wish!) and threw that in my toaster oven to bake for about 2-3 minutes (at 350…watch them as they burn easily when they are rolled into lil chunks) while I iced my cake. Top with the baked brownie chunks and nut butter of choice (I used cashew) and NOM UP!

Macros for my cake (includes the use of 1 tbsp of 2.7% plain goat yogurt, 1/4 a brownie Questbar and 1/2 tbsp of cashew butter)

Cals:430 Carbs: 54 Protein:27 Fat:13 Sugar:7 (all banana) Fiber:13

There you have it. A tasty and healthy cake full of protein, healthy carbohydrates and fats to keep you fueled for your morning routine.

Are you a cake fan in general? I can’t say I have ever really appreciated cake. If I ever actually had to choose a cake-like dessert, it would probably be my Mom’s homemade apple pie and that’s not even a cake. Never tried ice-cream cake though (darn lactose intolerance) so I can’t speak on that eye-gasmic sight.

Brownie Stuffed Plantain Muffins

***So I’m re-posting this recipe so that I can take part in CandyFit’s #RecipeFriday as I have wanted to do that for a while and this week I actually had a good lil recipe to share with the blog world. Is that cheating? 😛 Anyways I hope you enjoy them, they are quite yummy. So I had promised you the recipe for these lil babies last night in my WIAW post

IMG_2447So now is the time I will give it to ya! I wanted to wait and not add it to my post last night because 1. I was running super late and my boyfriend was wanting me to come join him for our nightly Entourage watching and 2. because I wanted to try one out for myself, rather than relying solely on my boyfriends thumbs up, before giving you the recipe! So I had one last night and they were really yummy! Yes, a success with my first plantain experience! 😀 Subtly sweet from the plantains, chocolately from the brownie pieces and a nice lil crunch from the random nuts and cacao nibs that were added into the batter. A lil bit of everythang in there. Just look at those brownie chunks! So good.

Brownie Stuffed Plantain Muffins

Wet Ingredients 1

1 tsp coconut oil

150g ripe plantain

Wet Ingredients 2

1 large egg

1 large white white (3 tbsp liquid egg whites)

1/4 cup apple sauce

1/4 cup milk (I used unsweetened Dream Blends- coconut and almond blend)

1 tbsp natural crunchy peanut butter (or favourite nut butter)

2 tbsp peanut flour + 2-3 tbsp water to reconstitute

2 tsp coconut oil (liquid)

Dry Ingredients

1 scoop Cellucor peanut butter marshmallow whey (or other PB or vanilla flavoured whey)

1/2 cup oats

2 tbsp coconut flour

2 Stevia packets (or more if you have a bigger sweet tooth)

1 tsp cinnamon

1 tsp baking powder

Add-Ins

1 Quest Brownie bar, cut into chunks (feel free to replace with chocolate chips, carob chips, etc)

1/2 ounce of raw cacao nibs

Directions:

  1. Slice up your plantain and sautee in the 1 tsp of coconut oil on medium/medium high heat. When they have caramelized on both sides and start sticking to the pan, add some water (few tbsp at the most) to the pan (be careful as it will spit a little bit), swirl it around and pop a lid on it. What you are doing here is first caramelizing (through sauteing them) the plantains to release more sweetness and then steaming them to heat them through more so you can mash it all up into a puree. When the majority of the water has been soaked up, begin to mash up the plantains and continue to add water and pop the lid back on until all of the plantains have been mashed up. Take off the heat and set aside.
  2. Preheat your oven to 325 degrees.
  3. Pulse half of your oats into a flour (1/4 cup of oats).
  4. Add your oat flour to a large bowl and then add the rest of the dry ingredients to the bowl and combine.
  5. Crack the egg into a separate bowl and whisk until it’s all broken up. Add the rest of the wet ingredients (with the exception of the coconut oil as it will solidify again as the ingredients are cold) and combine until the peanut butter is broken up and distributed.
  6. Add the plantain mixture to the wet ingredients and mix well, mashing any larger lumps.
  7. Add the 2 tsp of coconut oil and quickly mix. **If your coconut oil starts to solidify again, you can microwave the mixture in 30 second intervals (you don’t want to cook the eggs) and stir until it is more liquidy again**

    Here’s what your wet mixture will look like

  8. Fold the wet into the dry ingredients. **If your mixture is too dry, add a lil more water** it will depend on your whey
  9. Chop up your brownie Questbar (if using) into chunks and fold those and the cacao nibs into the batter.
  10. Pour your batter into 6 large (or 12 smaller) sprayed muffin molds and bake covered (aluminum foil tented) in the oven until the muffins have set in the middle and when a toothpick inserted into the centre it comes out clean. Mine, which I baked into 6 larger muffins, took about 25 minutes to bake.
  11. Remove from the oven and let cool before flipping them out of the muffin tins.
  12. Enjoy!

Nutritionals (per 1/12 of the recipe, or 1/2 a large muffin)

Calories: 102.9, Fat: 4.2g, Carbs: 11.8, Protein: 6.8g, Fiber: 3.7, Sugar: 2.7g (all from the plantain)

Eaten hot or cold (cold brings out more sweetness, but I like my goodies warm), topped with nut butter or plain, these are really good so I hope you enjoy them as much as we did over here! I get super excited (nerd much) when a new experiment works out well. 😀 Remember, feel free to add in anything your lil heart desires but the Questbar chunks really make these more decadent 😉
