1. Getting to actually enjoy the holiday and the famjam is so Marvelous

It is rare that I get a Thanksgiving weekend that isn’t right in the middle of midterms so I totally took advantage of the fact that this year my two first midterms were right before the long weekend by doing what any tired student would do

So yes, I actually got to spend time with my family when they came up for dinner on Sunday for Thanksgiving and didn’t have to have my mind elsewhere or have to run away to study. Also, I got to do what I love doing which is cooking a big part of the dinner!

2. Remembering that gelato is amazing too is quite Marvelous.

Due to being home I knew my Friday Ice Cream Challenge Day would take place at my favourite ice cream shop. Unfortunately for me, my favourites (salted caramel and caribous caboose) are apparently seasonal and got the boot September first. After crying on the inside a lil bit I decided to wander over to their homemade gelatos to find Snickers gelato..

Yes Snickers gelato! It had so many mixin’s too which is why I was not going for my beloved gelato because I really have come to love those mixin’s and gelato is generally smooth.

On the top was pralines and creme which is really good (caramel and more caramel) but I’m kinda kickin myself for not getting the Reeses (peanut butter gelato with Reeses and peanut butter…I know I would smack me too) gelato along with my other candy inspired flavour (which was amazing btw!).

Peanut butter and caramel = love in my eyes.

Next time it’s going down!

3. Dem shoes are Marvelousย

Got my shoes ladies and gents! Aren’t they purdy. Yes, I’m that girl who wants the loudest colours possible! Went with the Nike Frees and they are super comfy so I’m happy. The flynet 5.0’s were great but unfortunately the smallest size they manufacture was still too big for my child-size feet.

Sometimes being #DollSized is not cute.

Mom’s new addition was her craving for a sweet mashed potato. It was simply mashed sweet taters with booth, brown sugar, cinnamon and a hint of nutmeg.

Plain mashed potatoes with buttah and milk for the gravy dumpers..and my Dad.

Roasted root vegetables by moi….purple sweet taters (thank you Whole Foods for bringing back my favs!), regular sweet pots, brussels and green beans with rosemary, olive oil and thyme

Oh and the unpictured peach pie and MY ICE CREAM (the Kawartha Salted Caramel Truffle my Dad bought for me a while ago)…which I haven’t touched yet…Fear Food:1, Chelsea:0, was the dessert for the fam. Yes, peach is not very Thanksgiving like but when it’s made with the last of the in season peaches from the farmers market, you bring that **it out in all it’s glory. The fam really enjoyed it. We did good Mom!

6. Finally making what you meant to make eons ago is Marvelous

Remembering that I had some beautiful ground lean elk in the freezer that I wanted to make up using the grill ended off becoming a foil pan full of freezer ready sliders (X2 servings), meatballs (X1 serving) and burger patties (X2 servings).

I really love the flavour of elk. It’s my new favourite game meat.

For these I simply seasoned with Worcestershire sauce, diced onion, garlic powder, chill flakes, fennel seed, and lots of cracked black pepper and then formed them up and tossed them on the grill.

Easy Peasy and now I got #RedMeatGains for days that I can just pull out of the freezer as I please.

7. Stocking up on your ‘at home goodies’ is always Marvelous

Those things that you can only really get when at home.

So you make sure to get allllll them goods. For me, it’s taking a trip to my Freezer Place (a hidden gem here in Acton with all bulk frozen stuff but that includes organics, my game meats and lotsa local fish for great prices). So I hustled my lil tussle over to there and picked up a few hundred things essentials

8. Seeing my new Coach who will lead me to better health the way I want it to be done.

I expressing great gratitude to a family friend, Michael Grayer, for taking my challenging self on as I have finally accepted that I need help in this weight restorationย process. The difference between him and a dietician…

Yes we are working towards the same picture, but I know this process will still be tough. I need to give my control to him and know that he will not steer me wrong and that will be very hard for me. He will bring my physique to new heights which will not only make changes aesthetically, but it will bring me back up to an acceptable health status as well.

Well thats it my friends! I have one more day off tomorrow (that is our winter ‘reading break’…one day HA! but hey I will take it) and that is when I trek over to the Barbell Club to chit chat with Michael and plan out how things are gunna be from now on. I’m nervous for the change but more excited then anything to see what he can bring for me.

Cooking For Parents Round Up #2

Hey Friends!

I never managed to get this one up for Recipe Friday due to…ya know…Christmas-y things and all but here were last weeks meals. You will notice the change in ‘quality’ per say, or maybe thought or effort would be a better word for it, as we were busy and also out a lot more so you will see what my parents eat vs myself when we go out to malls and such.

ย I cheated and bought a store bought teriyaki sauce because we were rushed. Personally, I don’t use store bought sauces because even the low sodium is still loaded with the stuff PLUS they also have a list of 1000 ingredients, where many are sugars and weird chemicals. That being said, I’m not trying to kill my parents by using it.ย  They would have done the exact same thing as they ain’t about making their own stirfry sauce.

IMG_6923I got my Mom some shrimp as she loves the lil guys and it’s another thing she rarely has at home, while my Dad had some leftover chicken. The whole veggie-licious saute was thrown on top of Uncle Ben’s 20 minute rice and topped with sprouts for the presentation…not that it was anything professional there. ๐Ÿ˜›

My Mom is kinda weird (well my Dad and I think so) and has a deconstructed stirfry. She likes to keep her rice separate so she can add more sodium soy sauce on it. To each her own I suppose. She is also pickier about here veggies which is why hers looks a wee bit sparse there. She doesn’t do broccoli (upsets her tummy like me), onions or peppers. Soo I gave her more carrots and snow peas PLUS I added some cauliflower to hers to compensate.

Benefits of stirfries:

  • Healthy. Depending on your sauce I suppose (try this one for a homemade, whole food teriyaki sauce). Otherwise, most stirfries are full of vegetables, colours and leaner proteins. Add some nuts (cashews and peanuts are the best!) for some healthy fats and crunch if you’re feelin fancy.
  • Customizable. Once again, you can throw in your favourites and make a meal that you know you will enjoy.
  • Fast.
  • Handy for clearing out produce and left over proteins.

Sunday December 21

This was the day we went to my Grandparents house for brunch, which was a tad bit late at roughly 2:30pm that afternoon. Although I didn’t snap pictures of my parents plates…my family might have mocked me and, to be completely honest, I was ready to eat my arm at that point so I was just interested in inhaling my own food….I did take a quicksie of my own lunch.

4 egg white omelette stuffed with leftover baked rainbow trout and sauteed mushrooms, asparagus, kale, onions and garlic. Seasoned with more garlic powder, Mrs. Dash tomato basil, pepper and chili flakes.

Yes, I brought my food to my grandparents house. Yes my family is used to this. For me, I don’t know what they are serving and I’m always doubtful that I will be able to find enough to eat due to my allergies so it’s best to be safe then not eat. This omelette was enjoyed with some steamed peas and a salad with balsamic vinegar that my Auntie Candy brought.

That night for dinner, my parents felt that it was too late to really cook anything so they stopped into Subway for their dinner. My Mom always gets a wrap with honey mustard, chicken breast, bacon and lettuce. Yes, so doesn’t go crazy with toppings (did I mention she’s weird in comparison to me? ๐Ÿ˜› Love you Mom). My Dad got a foot long of something that I don’t remember. Chicken of some kind I believe.

Monday December 22

This was my date night with my Nana and Papa at Swiss Chalet, so my parents had to fend for themselves this night. This date is a yearly tradition and I look forward to it every year because it’s our special night.

Tuesday December 23

IMG_6954You can’t win them all. See, I don’t control everything my parents eat. This night I was told that Dad was taking care of dinner and this is what he showed up with. Guess someone had a craving.

“I love your homemade pizza bun, but sometimes I really want a dirty pizza…”

In other news, my ostrich steak was awesome.

Wednesday December 24

I wanted to make them something special for Christmas Eve and, surprisingly, despite it being all top quality a la Keg …Ha I can tell myself that…it didn’t take that long to prepare at all. This is a prime example of letting real, amazing ingredients speak for themselves.

IMG_6961My Dad had a filet mignon with sauteed mushrooms, roasted peppers and onions and an foil wrapped, oven roasted potato (it was massive! If I had my way it would have been smaller) stuffed with onions. For the steak, I seasoned both sides with pepper and garlic powder and gave it a nice sear on both sides in some coconut oil before baking it at 350 to finish it off to the medium doneness that my Dad likes. He left the table feeling quite content.

My Mom got her own prize of something I had promised her sometime over the break.

IMG_6965Lobster. Drool. I topped my swordfish with a piece or two so I got a lil taste. ;-). She also had a potato (which she only could eat half) but no onions for her, just butter…and more butter post picture…and those sauteed mushrooms. She also got roasted asparagus.

I was happy I could give them something fancier for the holiday evening and they quite enjoyed it.

Leftovers. Doesn’t everyone do that on Boxing Day? I has myself something different (fish of course) as I cannot do turkey multiple days in a row or it upsets my tummy, but my parents had Christmas dinner take 2

ย Shoppin time! We headed to the Eaton Centre to get our shop on that day and so dinner was in the food court. One thing I love about that mall is always getting my massive gourmet #SaladBeast at Fast and Fresh.

Customized salad. House blend, roasted portabello mushrooms, sundried tomatoes, beets, celery, peppers, grilled chicken breast, cucumber and 1/2 a scoop of their house made balsamic vinaigrette.dressing.

I’m pretty sure there was an entire massive portabello cap in my one salad. They were so big that I had to stop and pull some of them apart to eat them. So good and so worth the 13 dollars…although my Dad may not think so. ๐Ÿ˜‰

Sunday December 28

Sorry no picture, but more leftovers concoction style. The recipe is basically the same as the one I linked except my parents use regular soy sauce (as opposed to the soy free, coconut seasoning I use), no sprouts and no spinach.

Well that was our week. Although there weren’t as many recipes as the last one, I wanted to show you how my parents and I ate when things get a lil busier or we are out. I hope it still is useful for ya!

WIAW…Playing Catch Up

Hey Friends!

First and foremost it’s my 40th post today! YAY Lil Miss Fitness Freak! With that said I wanted to ask a few questions regarding my blog:

So onto the main event WHAT DID I EAT?!?! I know you’re dying to know. ๐Ÿ˜‰ Due to missing WIAW last week I decided to just dump a whole bunch of noms on ya this week. Thanks to Jen and lil chickpea for hosting the part-ay!

Peas and Crayons

Here are some of the things that I have been lovin for the past 2 weeks…and remembered to take snapsies of:

Proat Lovin

peanut butter jelly oatsPB&J proats

OMG these were absolutely fabulous! I was super surprised because normally I really miss my banana if I don’t put any in, but these were delicious. The peanut flour adds a nice subtle peanutty flavour while also giving me some extra carbs before my leg workout.

For the base (to refrigerate over night) I combined:

  • 1/3 cup + 1 tbsp oats
  • 2 tbsp peanut flour (replacing the whey)
  • 1 tsp chia seeds
  • 1/3 cup each unsweetened almond milk and water
  • cinnamon to taste

In the morning, add a lil bit more water, stir it up and nuke for 2-3 minutes. Stir in 2-3 egg whites (1/4-1/3 cup) and a lil bit more water until the eggs are dissolved. Nuke for another 2 minutes. While this is cooking, tear 1/4 of a peanut butter jelly Quest bar into bites and bake them for 3-4 minutes or until browned. Once the oatmeal is done, take out, add a lil bit more water and stir in 100g of melted strawberries (just diced strawberries nuked for 1:30-2 minutes until melty but still chunky), your baked Questbar bites, 1/4 peanut butter jelly Questbar (this one is raw and cut into bites) and 1/2 tsp of camu camu powder (optional superfood addition). Top with 1/2 tbsp of crunchy peanut butter and devour! So good ๐Ÿ˜€

IMG_1924Proats with peanut flour (rather than whey), banana, peanut butter, lucuma powder and 1/2 a peanut butter Questbar (half baked, half raw) for leg day last week.

IMG_1961Proats with strawberries, maca powder, 1/2 a strawberry cheesecake Questbar (again raw and baked bites) and peanut butter. Had lots of organic strawberries to use up!

IMG_1959Not as pretty but this is how I actually eat my proats (same bowl as the above picture). I stir it all up and bring lots of goodies to the centre to top with my peanut butter so that last bite is epic! Yes I eat around the edges of the bowl first….Im 22 years old I swear! ๐Ÿ˜€

IMG_1964Legday proats this morning with lots of banana (65g), lucuma powder, Cellucor cinnamon swirl whey (rather than my chocolate New Zealand whey), 1/2 a cinnamon bun Questbar (raw and baked as usual) and a 1/2 tbsp peanut butter. OMG first off, I had forgotten how much I liked the cinnamon questbar…those new flavours are so good that they take you away from having the older classics. So yummy! The addition of the Cellucor protein was super good too. I hadn’t mixed this particular brand of protein (despite their flavours being fab!) into my proats for a while because I remembered it clumping really badly. This time it didn’t clump at all and the cinnamon flavour was really good! NOMMY.

The Usual Suspects..but wait…

IMG_1942…they were literally on the go. Post-Post workout flexbowl of green veggies, purple sweet tater and turkey breast meat that was sauteed with onion, basil and ginger and thrown into a bowl before we got kicked out of our house for a showing.

Restday AM Snackie

IMG_19311 jumbo egg (hello healthy fats!), 3 egg whites, come cooked ground chicken breast meat, steamed brussels and asparagus all made into an omelet and topped with mustard and tabasco. Again limited spices as I was at home but made due with ginger, basil and chili flakes. What you don’t have omelets for snacks? You should…why? Check out that yolkporn:

IMG_1934Again, always make sure you have the bestest most nommy last bite. This one had the most yolk with a lil bit of all the stuffing ingredients.

Lovin me some fish and greens!

IMG_1913Baked basil pesto haddock with chili flakes topped with 1/4 ounce light goat cheese (mmmmm), avocado (say what?! I know, its no longer revolting! Yay to more healthy fats) and three lil shrimpies served alongside a mountain of swiss chard sauteed with onion, garlic, mushrooms, curry powder, chili flakes and chili powder AND rosemary roasted kabocha. THIS WAS AMAZING! It may be simple but so so satisfying. This was my first time trying haddock and despite my concerns that it would be too much like halibut or cod (not really a huge fan of either), it was pretty tasty.

IMG_1963Dinner on repeat last night but I got me some more of my love…Steelhead trout. Super YUM! I was soo hangry by the time I got to eat this that I actually barely felt anything in my stomach after I finished… Biking in the city for the afternoon on top of traffic keeping you from dinner for too long results in a bottomless pit of a stomach apparently.

IMG_1925Legday ‘throw it all in a bowl and call it a meal’ dinner last Thursday. Normal swiss chard sautee (but with golden beets added), bulgar wheat, 1/2 can of tuna (sprinkled with chili and curry powders), cooked tandoori spiced ground chicken breast meat (hence the pinkish colour).

Well that’s all for the nom-sharing as I have a busy day ahead.ย  I hope to be able to squeeze in some baking time, specifically more Quest protein bread (easy peazy squeezy to make) and some more homemade Nuttzo with the crazy expensive organic nuts I bought yesterday after raiding the Whole Foods bulk bins in TO.ย  This version I hope will be even tastier than the last as I got pistachios and pecans this time on top of all the others. ๐Ÿ˜‰

Do you enjoy simple meals or are you more keen to making lavish meals? My boyfriend would call most of my meals lavish as I take the time to cook them the way I like’em (some would say OCD, I like to say I make’em to enjoy them). As you can see, I love a simple meal of baked fish, roasted squash and greens with some good spices thrown into the mix. Not hard right?

Every made your own homemade nut butter? Can’t live without my homemade crunchy peanut butter. I let the nuts roast for longer so mine gets a richer taste. Yay for personalization ๐Ÿ˜€

Did you bake anything this week? The local fruits have been giving me the baking urge as of late. Figs and peaches have both been on my to-do list.

Comin’ Out Of Hiding…And It’s Marvelous

Hey Friends,

I have been missin’ my bloggy during my lil spree of MIA-ness. Was suuuuper busy studying for this lil certification

I wrote the exam portion this past Saturday and now await the results. Friday, friday ya’ll! Cross your fingers for me. ๐Ÿ˜€ Once you pass the written part its time for the practical, so that awaits me in the near future. Good stuff…anyways moving on.

I decided that since it had been such a long time since I had blogged…I even missed WIAW!…which is a super bummer, I thought I would join in on another weekly link up party that I have yet to participate in yet.

MiMM MIMM #63 with Family Night, Froyo, and More!

Marvelous In My Monday, or MIMM, was created by Katie over at Healthy Diva Eats. I truly love the idea of this link up party because the way I see it, what better way to start up your week on a positive note than reminiscing about the good times you had during a relaxing (hopefully!) weekend away from work and stress. So onward we go. What marvelous-ness did I have the chance to enjoy?

Marvelous is getting to see my family for the weekend.

Due to living in Hamilton and my parents and my lil pooch living back in my hometown, I don’t tend to see them all that often so sometimes it’s nice to go back home and see whats been happening and spent some time together. Sadly, one of these popped up on our lawn as of Saturday

I can’t say that this was a marvelous thing to hear about but hopefully once I see the inside of the new house I will stop being cranky about it. In my defense, this house was the one I lived in for pretty much my entire life, until I moved away for school, so it’s quite sad to think about someone else calling it ‘home.’ Like I said, time will allow me to get used to the idea of moving on from my childhood home…I hope.

A physical object is not what keeps memories alive. The memories worth remembering are those that have situated themselves within our minds and are forever there to recall long after that physical entity has passed its time.

Marvelous is relaxing after a stressful situation/event/day

Said stressful event was my Saturday PT exam that I previously mentioned. It was nice to relax and get treated to some pampering

I love gettin sparkles and special flowers on my nails whenever I get them done. This time I took it one step further and got a diamond jewel placed in the centre of my flower. Yup I’m 22 and still rock the teenager style toe polish and designs and love every bit of it. ๐Ÿ˜€

IMG_1943My mom had gotten a pedicure earlier in the day while I was writing my test and said that I should get one too. I really shouldn’t have tried to object as 1. its a pedi and 2. it was on my parents. Free and pretty…that’s a pretty good deal if I do say so myself! ๐Ÿ˜‰ Thanks Mom and Dad. Oh and how my feet are so dark compared to my mom’s despite feeling like I never get lots of time outside is beyond me. Random tanned child.

Marvelous is getting to make my FAVOURITE foods

This is why my parents should never let me quickly run into the grocery store with their debit card….Thanks again for dinner Mom and Dad. ๐Ÿ˜› I adore scallops so for special occasions I will pick’em up for a delicious meal like this one. Also…toot toot, look at that sear! Chef skillz over here! This dinner was just so amazing, got my swiss chard sautee that I have been addicted to lately (swiss chard, onions, garlic, mushrooms, spices), rosemary roasted butternut squash and avocado. Never thought I would hear myself say that avocado was part of anything delicious, but I’m actually starting to like it. Soothes the tummy too which is a plus for those with irritable digestion.

Marvelous is being able to get back to bloggin!

Did I ever miss blogging…and baking (still have yet to do that sadface) while I was attached at the hip to my PT training manual! Hence why I have been firing out posts like crazy as of yesterday evening. Gotta reacquaint myself with the Lil Miss Fitness Freak realm. If you didn’t notice, I posted the recipe for this beauty yesterday.

Sunday night, on our way back to Hamilton, my parents and I got to meet up with Molly at Whole Foods for a lil dinner and dessert…well dessert for moi as it was my cheat night ;-).

IMG_1947Molly is an amazing friend of mine who I met through some hard times more than 6 years ago! It always makes me so happy when we can arrange a meet up as we share so many things in common…like walking around Whole Foods for hours! ๐Ÿ˜€ Foodie fun. She is also a health and foodie blogger over at The Happiness Recipe so you should definitely check her out. Wonderful recipes and DIY tricks and crafts from this very talented Molly Mouse. ๐Ÿ˜€

Of course I also have to share the goods

IMG_1944Random assortment from the salad bar (spinach, beets, cucs, peppers), hot bar (a few roasted carrots, steamed trees, some ratatoille that was super yummy and artichoke baked tilapia that was amazing) and a side of random romaine for my moms lettuce-less sammich. I wanted to keep dinner light so that I could try out their gelato for the first time (surprising eh?).

IMG_1945Two lil scoops of banana peanut butter flavour. Yeah, no pistachio that day ๐Ÿ˜ฆ so I went for one of my favourite food combinations. The review: It was just okay. There was really only a light banana flavour that I could taste and definitely lacked in the peanut butter flavour department aside from one random peanut half that snuck into my bowl. Lil disappointed that I didn’t go crazy and try cookies and cream or the smores flavour. Oh well, nothing will ever please me more than pistachio.

Tonight was another reunion of sorts…

…With all my girls from McMaster. I was so happy to see them all because it really has been too long! Especially with Laura who has been flying all over the place loving her life as a newly trained flight attendant. So many stories to tell us! The length of time that passes before I get to see these ladies is really quite sad as the majority of us live in Hamilton! We just can never seem to arrange our schedules to do a routine girls night like we should. We all met up on Locke Street (the amazing street where I work) at Beasley’s House Bistro for dinner and catch-ups. While the company was awesome, my food was meh but that was my own fault as I was keepin it squeaky clean due to my cheat being last night.

IMG_1952Nice boring house salad (you would think they could at least put some more variety of veggies in there geesh! BUUUT I can’t complain too much as they gave more peppers than I expected) with grilled chicken (ordered dry with no salt). I brought my own typical dressing (1 tbsp ACV, 1/2 tbsp balsamic vinegar, 1/2 tsp olive oil, 2 tsp mustard, tbsp water, chili flakes and rosemary) and some avocado to ensure that I had some good fats in there. Yeah, I’m fun to take out. ๐Ÿ˜› Goals people, goals! My friends dishes looked really yummy though. Beasley’s is apparently known for their crepes and seafood so Laura got their seafood crepe and Sophia got their chicken one. Both smelled and looked amazing! I snuck a snap of Morgan’s crab stuffed sole….

IMG_1953Amazing right?!? I totally would have topped my salad with scallops but they probably would sear them off in butter and such. Sadface, oh well I got my own this weekend. ๐Ÿ˜€ Anyways the night was awesome because of my girls being there and that’s all that mattered!

So overall a busy weekend filled with good friends, good noms and de-stressing. That sounds pretty Marvelous to me! Thanks to Katie for hosting this event. ๐Ÿ˜€
