A Recipe…Say What?!

I know right, how long has it been?

I have heard from some of my readers that they miss my random recipes. I never felt like my food posts were anything special, but hey, if they’re easy and tasty, why not share them?

For me, I’m not a drinker, so this holiday that is pretty much based off of getting wasted for cheaper is really just an excuse for me to put green into as much of my day as possible.

Cue wearing a sparkly green shamrock headband to the gym.

Savory oats. 

….Crickets….

Yes I realize I just said savoury and oatmeal in the same sentence BUT hear me out.

Oats are really like a blank canvas. Just like rice, or for a more similar texture, polenta or risotto. They are a neutral base screaming for flavour blasting toppings. Many of us have come to perceive oatmeal as purely a sweet dish, but really, you can turn it savoury just as easily and it will still be that warm bowl of comfort you know and love.

So before you say “bleh!” give them a chance. I made this particular bowl for my housemate, Rita, and she absolutely loved them. My other housemate, Emily, on the other hand was stuck in ‘sweet oats only’ mode and was afraid of them despite saying they smelled awesome.

I will convert her just you wait.

So I went to the internet searching for some inspiration. I can confidently say that this girl knows how to make a pretty damn good bowl of proats but I had too many thoughts going on and needed something to calm them down a tad. Plus, I didn’t want to screw up the first bowl of savoury oats for zee housies because then they would never touch them again.

Can’t have that can we?

Mexican? Rita loves avocado, beans…not so sure.

Taco! Spicy, yes, avocado, yes…hmm..

Wait, what is that seaweed in the cupboard…?

Sushi oats. Bam, sold. 

So with that, the bowl you see before you was created. Now if only I had some wasabi and pickled ginger….

I hope you will conquer your fears and try this out. It legit smelled like sushi so if you swing that way, it’s something you would enjoy I’m sure.

Asian Sushi Oats. 

Serves 1

Ingredients for the Oats:

~1 Serving of Rolled Oats (1/2 cup)

~1 cup Chicken or Vegetable Broth

~1 egg or 1/4 cup egg whites

~1 tsp oil of choice (coconut, avocado, sesame or peanut)

~1 tsp minced garlic

~1-2 tbsp diced onion

~approximately 1/8 cup dried seaweed or other sea vegetable (I used dulse)

~1 chopped green onion.

NOTE. I did see many sites saying to add a dash of fish or oyster sauce to the base so if you have it on hand go for it. Just only use a little bit. 

Directions.

  1. Heat your oil in a pot (use one that had a lid) on the stove at medium/high heat. Chop up your vegetables. When the oil is hot, add the garlic and onions and sauté until they are softened and fragrant (a few minutes).
  2. Add your oats, sea vegetable and broth, place the lid on the pot and bring to a boil.
  3. When it comes to a boil, remove the lid and bring it down to a simmer (medium heat). Stir your oatmeal consistently to prevent it from sticking to the bottom. If it soaks up too much liquid too quickly, simply add some water. When the oats have ALMOST reached the consistency you like, crack your egg (or add your liquid egg whites) to the pot and stir quickly to prevent scrambling the egg. *It should stir in with little to no white bits.
  4. Cook for a final minute or two and then remove from the heat. Stir in half of your green onion and keep 1/2 for garnish. Keep warm while your prep your toppings.

For the Toppings

~1 egg

~1 tsp roasted sesame seeds

~other half of the sliced green onion

~Chili flakes to taste (optional)

~Drizzle of sesame oil and/or soya sauce.

~any other sushi like topping of your liking. I would recommend some seaweed (Rita has this cool dried and sticky seaweed-sesame strands), avocado and perhaps some pickled ginger. Smoked salmon would make an amazing topping as well if you are all fancy and such.

Simply fry up you egg for a runny-yolk doneness. While that is cooking, place all of your toppings on your oats. Top with the egg and drizzle with your topping of choice. If using sesame oil BE CAREFUL that stuff is strong!

Eggs, Eggs And Moooe Eggs.

My Friends, this is a random post comin’ at you all thanks to my Dad’s breakfast plate.

I challenged myself to make him a new style of eggs every single morning this past week, and I think I may have done it. You see, he loves his eggs and although he would be perfectly content eating scrambled egg whites every day of his life, I decided to be annoying and give him his precious eggs in a different form. He may or may not have finally complained this morning that he really just loves the taste of his eggs plain…

….I can’t blame him though because if someone were to try and take over my oatmeal I might put up quite the fuss. We just like what we like around here.

But he let me be creative for as long as he was willing to stand it and so I came here to bring you some ideas on what to do with the simple egg.

Of course, if you’re in the same boat and just like them plain and simple and then by all means enjoy them in their purest form, but for those that are looking for something a lil different, he are some ideas for you.

You can scramble your eggs with a lil milk and perhaps cheese if you’re feelin extra special.

My Dad’s had a runny egg + sautéed tomatoes + mushrooms + onions + Cheddar

Even better still is doing open face with them fancy shmancy ingredients.

1 He won’t go near fish of any kind with a 4 foot pole.

2 He would ask me where the second piece of bread is. #CarbaholicAlert

3 He’s against anything green and mushy. Please don’t be offended beautiful avocado, he’s just weird. I still love you.

Find this recipe here. It is very similar to what I did. I wrapped the potato in foil and baked until it was tender then scooped out the inside and placed the egg inside. I threw some green onion on top with black pepper and baked it until the egg was set and then sprinkled it with his shaker parmesan cheese.

My Dad’s breakfast this morning was a egg baked into a green pepper with homemade hashbrowns. For the pepper, I just cut away about a third of a large pepper and took the inside membranes + seeds out and cracked an egg inside. I baked it covered with foil at 400 degrees until the egg was cooked. No runny yolk, but I’m sure you can get one, I just wanted to make sure the whites were fully cooked or my Dad would have refused to eat it lol.

Recycled picture of my pizza omelettes. Simply throw some egg whites and pizza spices in a pan (one medium low heat) and let them cook slightly before topping with all your favourite toppings. Cover it and let it fully cook through. Finally, crack an egg right in the middle and cover again until the egg is just cooked enough so that you get that runny yolk I failed to get in the picture above. 

Or you could just do a basic omelette

But who really wants to be basic? Ever made a baked omelette?

So I think I did pretty well for switchin things up. He did like them, he just wants to go back to his routine eggs for a lil bit. A few other ways you can do eggs, which I didn’t try for my Dad because, like I said, he wants to taste his eggs, are:

Quiche.

Frittata.

Breakfast Burritos.

Egg Muffins.

So yes eggs are simple, easy and healthy ingredients to work with but they don’t have to taste boring at all. Switch it up and try any of these ways to enjoy this wonderful, wholesome food.

Humpday Updates

My friends!

It’s a rainy humpday over here in Guelph and as I began to write this, I had just finished up my second pre-workout meal

My last purple sweet tater made it onto this plate this morning. So pretty. 6 ounces sweet potato + 2 ounces green mush goodness (avocado) + 3 ounces roasted chicken breast.

So how am I doing so far now that I’m officially just over a week in?

Honestly?

Better then expected. Mike brought me in ‘slowly’ with the addition of a whole other meal before my 10am workout which was scary to be quite frank. To think of eating my normal pre workout (big bowl of oats) and then an hour and half later eat what you saw above and then workout within the hour of that was actually terrifying.

Like for real, I had anxiety about it.

But I did it and now do it every day before my lift because I’m doing what I’m told.

I have to say though, that it digests fairly quickly and I’m not feeling as heavy as I thought I would. And I’m still starving marvin once that workout is done. Apparently my body is efficient like Mike said.

The issue though, which I’m now trying to pinpoint is the excess gas. Sorry is that too much info for ya?

I dunno if it’s the sweet potatoes, one of the supplements (of my hundred it seems) or just my stomach being annoying and trying to adjust to the new quantities, but for the first hour in the gym I have bubbles popping away in the tummy which is not the most comfortable feeling and makes me slightly self conscious as I’m feeling like I’m rocking a wee food baby belly.

Hopefully that passes or I may have to do some experimenting.

The other issue is sleep once again. I realize I complain about sleep a lot. Sigh. Sorry guys. Now that I have to squeeze in another meal, I’m trying to help myself out by trackin back the alarm an hour to a 6am wake up call and after a few days (plus the midterm yesterday), it’s hitting me real hard.

Goal of life is to finally say I get 7 hours of sleep a night…

One can dream.

Speaking of my midterm, in other non-food related news, I wrote my nutrition midterm yesterday morning and was so relieved that it was done that I did what I always do post-test time

For real guys, this always happens. My housemates know they get a lot of food when I’m done with midterms because for a few days I have a baking itch that I need to get out of my system.

Last night started with makin these lil guys for my housemates again because they loved them so much.

Plus I roasted a whole buttercup squash and fingerling potatoes for them to have for dinner (well lunch/dinner food prep for Rita since she is so busy at the school studio she never sees home…) and oats in a thermos (lol) for Rita in the morning because she never wakes up to eat and I get mad at her for not takin care of herself.

Pineapple fried rice (healthy style) using up some pineapple that I made OIAJ with for Rita a while back. I also threw in the rest of my lobster left over from my dinner tonight (I have a slight $$ addiction right now..). Lucky girl that I’m nice and share my delicious lobster…

..or maybe it’s just because it only lasts for 12 hours once you thaw the big container…

No one will ever know. 😉

I used this recipe and it smells amazing. Hopefully she enjoys the few meals she gets from it.

A very messy looking bowl of caramel apple zoats for Emily’s breakfast…

Err.. it was supposed to be breakfast but she ate them when she got home from the gym hangry.

For the oats:

I made traditional zoats with one whole egg mixed in half way through and chia seeds. While that was cooking I sautéed a diced up McIntosh apple in some coconut oil until it was soft and added some of my Walden Farms Caramel sauce (which I sadly cannot even tolerate a taste anymore…damn stomach it’s so yummy) to coat them. Once the zoats were done, I mixed the apples into them + some raisins + caramel extract and cinnamon. Then I topped it with a lil bit more caramel and a spoonful of my Salted Caramel Nuts n’more peanut butter.

When I said Rita’s smelled good, this smelled drool worthy

I promise I didn’t slobber in your zoats Em, but I may have sniffed them more then once…

Finally, what was supposed to be her dinner..

A steamer package ready to be baked. Wild sockeye salmon topped with basil pesto on top of some veggies. These steamer bags are bomb guys! This package went into the toaster oven and baked for a whole 20 minutes at 400 and bam it was done. Guess it’s lunch now for tomorrow with the roasted sweet tater I made to go along side it.

So yeah, chef Chelsea has put down her apron for the night, but I can’t say it won’t be put back on at least once more as I have 1/2 a jar of pumpkin left and it’s probably going to be bread-ified. 😀

So yeah, I’m doing okay thus far. It’s tough, but I’m making it through. I posted on my instagram (follow me for all my foods!) that I hope to see some gains soon because I need something to grasp onto as far as postivity goes as the food increases continue.

I do have a confession to make though my friends. As much as I complained and complained that I was going to miss it dearly, I skipped out on my ice cream cheatmeal last week and I don’t know when I will be able to get that back going at this time. I’m sad because I do really enjoy it and I feel like I made a tiny bit of progress with it psychologically, but with the amount of food that I’m having now, I just can’t bring myself to have it. It’s too hard.

Instead, I ‘cheated’ last week with a saladbeast from Freshii on my new second restday after the farmers market with my housemates. Dare I mention that I felt bad for it because of the fact that I was eating out (ie. cheating in my mind) on a rest day.

Yes guys, I felt bad about a salad.

Bad enough that I had a wee bit of physical anxiety symptoms later that day.

It is what it is and it’s something to be worked on (the whole mental issues I still have with how I perceive food) I know this. One thing at a time.

On a more positive note to end of the night, is the beautiful addition to my desk that I treated myself to today because they were on sale at Metro.

When The Bird Hits The Charcoal…Thinking Out Loud

My Friends!

Wow what a week so far. I’m so looking forward to sleeping in my bed (much needed!) after this week I had. We had a houseguest (remember Emily’s Chad?) come up for the weekend and I hated the fact that I couldn’t explore Guelph with them as I was stuck studying for my two midterms Tuesday (biomammalian  physiology) and Wednesday (research methods). With those back to back, plus a typical weekly quiz and assignment due, I was a lil bit busy…

Oh the life of learning. When I get busy that is not an excuse to miss the gym. That is my sanity and stress release. Post workout stir fry in my new buddy (i.e. thermos life) with some nice company…ie my backpack before my second midterm yesterday.

Not to worry though, I rewarded myself nicely with this…

And baking! Did some pumpkin-a-fying last night (aka pumpkin rampage) because I apparently needed to get a baking itch that had been suppressed for way to long.

So what did the housemates get?

Amanda’s Flourless Pumpkin Muffins.

I made them in my bundt pan and added some dark chocolate in the middle. They loved them last year and loved them just as much last night. They are currently more then half gone over the past 12 hours

Emily likes them…a lot 😀

She and Rita also enjoyed some good ol’ punkin and peanut butter oats in a jar as well because, well, if you open the pumpkin jar you mind as well just keep going right?

Tuesday Also Starts With “T”

In the blog world, that mean I can have thoughts on Tuesday’s too. 😛

What’s crack-a-lackin friends??

I’m so sorry I have been absent ever since droppin ‘the bomb‘ so to speak on ya about a week ago. I wasn’t avoiding you after that I swear, I just got busy with other life stuff and I kinda went through a brief period of not having much inspiration to write. Who knows, maybe that vlog took it all out of me and I needed a week to re-coop. Hehe, just kidding. I like being an open book and that post was super empowering for me to do!

That post leads me to my first thought of the day..

1. I love you guys

Thank you so much for all of your support on that vlog and post. It meant so much to me as I wasn’t sure how it was going to go, but it was something I felt I needed to do for myself. There is no reason to hide behind your past. Embrace it and use it to help others. I also want to thank you all for sharing your stories. I so appreciate how open and honest you were with me and the fact that you are willing to share a piece of yourselves with me. I’m glad I am perceived as being trustworthy enough for you to feel comfortable with me and this space.

2. It doesn’t take a lot to make someone smile

I really doesn’t. Happiness and being in a good mood is easily transferable to others. Take my bus driver today. Yes, my bus driver. He was actually the happiest bus driver I have ever seen. Despite sounding like he was a boat or cruise operator

…..aaaaaaannnnnddd ladies and gents we have made it to our destination. Thank you for boarding the 2A bus….

No joke that is what he said in that voice as we arrived onto campus. Amazing right?

His energy really made me smile and I’m sure it was touching to the rest of the boarders as well.

3. My need for the tropics has manifested in a new food obsession craving..

Guys, it’s a problem. Do you know how much pineapple costs here in Canada? I have managed to contain myself and keep it to either my pre or post workout protein oats only, but guys, if you haven’t had warmed pineapple in your oatmeal, do it. So good. Oh and while you’re at it, drizzle wizzle the top with a nice chocolate protein icing (good chocolate whey+ almond milk= icing).

4. Never forget those who did you a favour.

I went to get my usual Timmies (tea for all you non-Canadians) before my 4pm class today and I got a big ol’ smile from the wonderful lady working there on the daily. She now knows me. Why?

She did me a favour. A big favor. One afternoon I went in to get my tea and thought a nickel was a toonie (epic fail) and I guess she saw my disappointment and totally bought my tea for me! I’m going to say it again..Amazing no? She totally made my day. I knew I couldn’t let that go, so the next time I went to get my tea, I “bought 2” but took only one. The other one, in the form of change, went right into her pocket and I hope she bought herself a hot cup of joe for all the hard work that she does.

5. I’m on a baking kick again…

I don’t really know why these happen to me, but I just feel the need to bake all the things despite not really having the time to accomplish this. Over the weekend, my housemates have received quite a few random goodies

IMG_7370Baked french toast…or bread pudding…whatever you want to call it for Emily this morning.

IMG_7368Really super easy to make.

Preheat your oven to 350 degrees. Whisk an egg in a bowl. Add a good 1/2 cup of milk of choice, and chia seeds (or flax meal) and whisk that together. Then add your flavourings. For this one, I added 1 tsp of vanilla extract, about a tablespoon of peanut flour and mashed 1/3 of a ripe banana into the liquid. Then rip up 2 pieces of bread (I used sprouted grain) and fold that into the mixture. You want it to be a bit soupy at this point, as the bread soak it all in, so it you’re low on liquid, add more milk or egg whites. Toss in your additional add-ins and fold gently into the mixture. I added diced banana and carob chips. Finally, spray a bowl (or be lazy like me and use tin foil that has been sprayed so you don’t have to wash a dish afterwards ;-)) and pour your mixture into the bowl. Place any last toppings on there (I added some of Emily’s chocolate peanut butter from whole foods) and toss in the oven for about 30 minutes or until the ‘pudding’ is puffed up, firm and slightly golden on the top.

I made coconut pineapple rice pudding for Rita a few days ago. I blame her for my pineapple obsession.

I also made these for the whole house when I had a big container of leftover pumpkin that needed using up…

Thank you Miss Spoons! Sadly for me, my housemates said these were the best thing I have ever made them and I can’t even say it was my creation. Oh well, they were devoured in 3 days. Oh and that was double batch.

So yeah. Go make them.

6. I have been practicing being more mindful of my surroudings.

This is uber random and isn’t necessarily a super new thing as I have been doing it for about a month now. I felt the need one morning to not walk to class with my headphones in just because. What I realized was how much having one single earbud in my ear makes me tune out the world around me and really make me mindless. I am in no way saying that you shouldn’t enjoy your music, but I think it’s important to really take in your environment sometimes and not be just another student zombie walking to class with headphones in. Even in the gym (gasp!) I have done this and have found sometimes that it helps to get into my zone, but this depends on my mood more.

Its weird what you can come to appreciate. For example, oh the smile it brought to my face when I heard robin’s singing the other morning. SPRING IS A COMIN!

7. I hope she is at peace.

My friend posted a picture today of a friend who passed away from her eating disorder. Although I didn’t know her personally, I want to say that I hope this poor girl is at peace now. I hope that those demons can now shut up and let her be. These demons are very real. They take lives. Never forget the immense impact mental illness has.

Let your beautiful and freed soul dance and embrace what it feels like to be released from the cage that cooped you up for too long. ❤

7AM Workouts Calls For Cakes…

I swear I’m healing.

Trust me, I would be perfectly happy with having my oats every morning without fail. Yes, the idea of pancakes appeals to me. Yes Instagram makes me crave them often. Yes they are tasty, but to be honest, they disappear too fast so I often feel slightly underwhelmed or like I ate nothing.

Apparently if something doesn’t take me 20 minutes to eat, I haven’t eaten. #IHazIssues

I believe that is the reason why I tend to feel as if they don’t fuel me as well during my workouts as my zoats.

Sometime though, as much as you try to pre-prep your oatmeal, when you are short on time and are particular about how your oatmeal is prepared and eaten, you run out of time.

Enter zee cakes.

Make the night before and just reheat in the morning. Easy Peasy.

I just make tasty pancakes I say. Well, I make healthy protein pancakes that are tasty.

I cannot vouch for normal pancakes because I have never made a normal pancake.

Weird eh?

Anywho, I made these last night to have when my alarm went off at 5:30am this morning and they were quite good even though my syrup ran dry and only gave up a measly teaspoon.

Oh well, maybe that was its way of saying your tummy is not ready for #ChemicalFarms yet. Ooopps.

So I’m rambling. What else is new? I will stop and say, if you want some tasty protein pancakes go make these and enjoy having your cakes and eating them too.

Banana Studded Protein Pancakes

Serves 1

Dry Ingredients

  • 1/2 cup gluten free oats
  • 1/2 scoop protein powder (I used Diesel whey in chocolate peanut butter)
  • 1 tbsp coconut flour
  • 1 tsp  chia seeds

Wet Ingredients:

  • 1 egg white (2 tbsp liquid egg whites)
  • 1/4 cup of unsweetened almond milk plus more if needed to make a thick (spreadable batter, not pourable)
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of pink salt and cinnamon

Add-Ins:

  • 50g banana (or more, whatever you like)
  • Whatever else you desire.

Directions: Grind the oats into a flour. Add all of the rest of the dry and mix. Add your wet (except the almond milk). Add the almond milk and then enough to get a thick batter. Let that sit for at least 20 minutes to let the coconut flour and chai soak up some of the liquids. When you are ready to cook them, add more milk/water to your batter to once again make a thick batter. Preheat a pan with spray or some oil on medium-low to medium heat (cook low and slow!) and spoon out some batter onto the pan and shape it into a circle. Slice some of your banana and place on the pancake. Flip once the bottom is firm and starting to lift off the pan (these won’t bubble). Let the other side cook and then do the rest of the batter the same way.

Top your patty cakes with what ever you like. I did raw cashew butter, the left over Walden Farms sugar-free syrup and a sprinkle of cinnamon.

Lots of good carbohydrates and protein give me energy, plus fibre and healthy fats to keep that fuel pumpin for my 2 hour chest workout.

Day In The Life & What I Ate [Tuesday]

Hey Friends!

I had a request from a reader to do one of these style of posts and figured I would bring my A-game and take all zee pictures so that I could do just that for you. Lets take a peek into my typical Tuesday. This happens to also be my super early day because I need to get my lil tushie to the gym at 7:30Am Weeoo. Here we go.

Jump out of bed and throw my pre-made, naked zoats into the microwave for 6 minutes while I run back upstairs.

I can only have a touch (ie a tsp that has been watered down so it’s like I get more syyyrrrup) though or else my tummy gets mad that I’m eating crap. And yes, Walden Farms is crap. But the syrup is tasty crap I will admit.

Today’s workout was Chesticles. Lets take a looky at what I did

Chest Day Jan 27

SS= Super set (meaning no rest in between those 2-3 exercises). Drop set means you do your set as normal then immediately (no rest) drop to a lower weight and do another set. CC= Captains Chair

Forgot to put on there that sets 2 and 3 were all 4 total sets and set 4 was 3 sets (my burnout for the workout).

Oh hey PR! 85lb bench yo! I always find that because I’m feeling rushed on Tuesday’s that I’m super focused so despite it being my super early day, I always end up having an amazing workout.

Moment of Distraction: News shows that ferret eats half a little girls face….Well ain’t that nice.

9:25AM: Still going strong…must finish last burnout set

9:38AM: Must finish last set. Damn it someone took my rack for HLR.

9:40AM. Flail my arms around Stretch for a minute so I could say that I did it. Run to the change room to get my sh** together so I can bolt it back to campus.

10:15AM: Realizing how much my butt hurts from yesterdays leg day (1st of the week, glute/ham focus) as I attempt to cross my legs…

10:30AM: Sitting-in-a-chair fatigue starts to kick in. So I decide to multitask. Listen, take notes and begin to type this post up to keep my eyes open.

10:45AM: What no mid-class break? Apparently they don’t realize that I drank an entire bottle of water during my workout and I need to pee every 20 minutes.

11:20AM: Still have to pee..but more..

11:22AM: The bathroom here has two stalls and it’s lined up out the door…Ugh.

Question of the morning: Can I make it home?

Nope.

11:25AM: Stop into another building to pee then continue walking home.

11:30AM: Get home and prep my lunch because I’m hungry already…

Veggies are all prepped to be roasted in the toaster oven. Rice is on and Emily comes in so I chatter with her for a few while I get these things going.

12PM:shake my head that my veggies have been done for like 10 mins now, I’m ravishing and I’m sill not eating…Oh distractions. Wash face, shower, and get changed. <-aka put on PJ’s because who puts on clothes when they are in their house for a few hours? Not this girl, but you knew that already from my vlogs I’m sure. 😉

12:30PM: I’m finally eating. Ugh I have issues.

Roasted Veggies + 3 ounces Roasted Chicken + Pre-soaked and cooked Uncle Ben quick brown rice

Staple meal when I don’t have a meal directly right after my workout (ie proats). Yes, I eat out of that container because it keeps my food as hot as possible for the longest. 😀

Have any of you seen Eye Candy on MTV? Yes it sounds stupid but it’s actually pretty good. Don’t let the name scare you away. A lot of dying though lol.

1:30ishPM: Make pudding (for nightly snack) while catching up on some fitness/health YouTube vids.

I want to say that I was productive before my 4pm class but I was so freakin tired guys so I took a power nap before said class

3:25PM: Take my vitamin D drops and fish oils, eat about an ounce of leftover roasted chicken because I’m randomly starving again. Yeah, I didn’t eat that much but I figured I would test whether I was dehydrated so I had a lil bite then I was gunna get a Tim’s.

3:35PM: Left for class earlier to pick up my tea from Timmies and took the green bin and recycle with me to get that out of our house.

3:40PM: Tims in hand (which my gloves clearly do not want to hold. Hotpaws don’t hold things apparently). It’s actually not too bad out right now despite being cold…

4:55PM: In lecture and read this article [link] that a friend of mine posted on facebook (she was actually the sports nutritionist I saw).

4-5:20PM: Managing Resources lecture + working on this post + working on an assignment for this class. For said assignment I did the Big Five personality test online. If you’re interested, here were my results.

5:15PM: Walking back home.

5:25PM: Walk into the house to find Emily sleeping on the couch. Daaaaawwww.

5:30PM: Finish making my workout summary on PicMonkey

Moment of Worry: So I found that cool background randomly online and I’m hoping I don’t get attacked for using it on my site…cuz I couldn’t find a reference for it… :-/

5:40PM: Hunger starting to ping in again (what is with this non-stop hanger today?! Delayed needs from leg day yesterday?) so I consider slowly making my way back downstairs to start making dinner. Swordfish on the menu tonight. 😀

….Gets distracted by another assignment…

6PM: Downstairs to start cooking. Emily has woken up so I’m chattering with her as I cook.

IMG_71556:45PM: Just as I sit down with my appie salad (I eat this while my other half is baking/roasting) my computer randomly turned off on it’s own. Awesome.

6:50PM: Macbook is now back on (I’m still using my old one, which does random things sometimes #OldieProblems, as I’m waiting on software for my new one), Pretty Little Liars is on and I’m nommin away. The growling had stopped by now, which is probably not a good thing.

7:10ishPM: Round 2. Baked swordfish and all it’s oily beauty + all the roasty squash. We have delicata, acorn and buttercup there roasted with some olive oil and dried rosemary. Yeah, I don’t do sweet roasted squash. Savory FTW!

IMG_71567:30PM: Done dinnah, prepping my morning preworkout (soaking my oats and chia seeds) while watching the last leg of PLL and making my Dad a little something something for making his way up real quick tomorrow to drop off my casein. Such a nice Dad I have. 🙂

8:10PM: In go my Dad’s muffin/cupcake thingys..

9:30PM: Read some journals for my Couples and Relationships course assignment.

9:40ishPM: Go put pudding in the freezer + heat up tea that I steeped while cooking muffins earlier and head back upstairs to get back to worky.

Emily catches me as I head back upstairs and makes me smile as she beams about how good her first boxing lesson made her feel. Strong and powerful.

 10:15PM: Starting to wind down before getting my snack and to beddies.

10:40PM: Snack time with blog reading time and I will attempt to make it into bed before midnight.

No s’mores questbar tonight. That’s a shocker. A friend and I were talking about baking the cookie dough one and that got me craving it.

Overall, I didn’t get as much work done as I had wanted to as I kept getting distracted with other things and plus I took that nap but I told myself that was okay and I would just power through it over the next few days. Midterms are slowly creeping up and assignment deadlines are starting to show themselves on the horizon so the beginning of the semester grace period is coming to a close rapidly.
